How to change password for polyglot?

I might be missing something really obvious, but can't find a simple way to change the login info and password for polyglot v2 on a RPi, so that I'm not stuck with "admin". I found some instructions to edit a .env file, but being fairly ignorant of RPi and Linux, I don't really know how to do this, and think it might make sense for there to be an easier way to do something that basic. Am I missing something obvious? And if not, does anyone have basic instructions for changing this, for a complete noob? Thanks in advance for any help.

DON'T play with creating an .env file. Some of those instructions in git-hub are out of date and may mess your system up badly.

As much as the screenshots are a PITA to post they really are worth a thousand words. So much easier than explanations.
