When I ask Alexa to "make a certain device 50%", some of the devices respond as requested and on others she returns the message "that command doesn't work on this device". Any ideas why that would be?

If you have this issue with dimmers, please go to http://whateveryour isy's ip is/rest/nodes and send it to support@universal-devices.com and identify the nodes with which you have problems.
