Over the Air firmware updates is currently not possible on ISY.  You will have to use another system to perform the firmware update.  The process will depend on what other system you use and if you will have to fully exclude/include the devices or if you can do a secondary controller setup to perform updates.  This question is best suited for UD support.

I’m beginning to think that the ISY “kinda/sorta” does z-wave. Not being able to update the firmware of a device that allows for it without removing it from a system, then using another system to update, then putting the device back into the ISY, is not a great implementation of a technology, to be frank. Firmware update capabilities exist for good reason, so not allowing for them is far from ideal. UDI might want to invest some time and effort here as firmware updates are likely to become more and more common as devices become more complex.

Most controllers do not do the firmware updates of devices (many devices are capable but still don't receive them anyway). OTA updates is still a crapshot. The couple of controllers that do it only do it for a few companies, and some device makers force you to use their own controller (here's looking at you fibaro) or force you to send your device in. 

It is on UDIs roadmap. I think as OTA updates improves and more mfg. take advantage of it, you'll find more controllers will invest the time in integrating it into their products. Mfg. current way of doing things is a complete mess which is probably why many don't want to touch it.

Could this be possible using Z-Wave replace failed node? Just remove the Z-Wave device without telling ISY... reset it and include it on a different computer controller which you do firmware update on, then do the Z-Wave replace failed node procedure like it is a replacement/new device? I am not sure what the procedure is since I don't have a spare Z-Wave device to test -  I select it to see what it does and asks if I want to continue and I did not.

Never tried it myself  since I haven't had a need to. Technically it could work as long as the isy sees the device as a failed node prior to trying the procedure. This is similar to swapping an insteon device in the isy.
