I am new to this, so this may be obvious, but there are only 20-something node servers in the store. Is this likely to increase? And I saw people talking about ones that I don't see there, (myQ for instance) so I am wondering where I would find them, or how I could load them in?

There are cloud based and non-cloud based node servers.  If are comfortable with RPI then you can create the polyglot server on that.  See here

There are 20 something nodeservers in the Polyglot cloud, but there are 68 for Polyglot installed locally: https://polyglot.universal-devices.com/

There are some duplicates.

Hmmmmm. I see. Thank you. I think this makes things a little more clear. Is “installing locally” Something a layman can do? I mean, I understand the words, but don’t know specifically how I would do that.

If you want to run local the easy way, get a Polisy.

That depends on you. Personally I think it's simple to set up on your own but if you're not technically inclined, you will probably struggle. At that point, Polisy would be the easiest way
